Ingredients
- 4 cups chopped cooked chicken, abut 1 ½ pounds boneless skinless chicken breasts
- 4 ounces cream cheese, room temperature
- 1 cup cottage cheese
- 1 cup pepper jack, shredded from a block
- 1 cup Parmesan, shredded
- ½ cup sour cream
- ½ cup green onions, plus some for garnish
- 10.75 ounces cream of chicken soup
- ½ teaspoon garlic powder
- ¼ teaspoon dried onion powder
- 1 sleeve Ritz crackers, crushed
- 5 tablespoon butter, melted

Preheat oven to 350ºF. Lightly spray a 9×9-inch baking dish with cooking spray and set aside.

I have not made it yet but it is very similar to a recipe I've made, but with several additional items. I can't wait to make this and I plan to substitute the ritz cracker or panko with.....wait for it.......french onions on top. Doesn't that sound yummy.....I will probably cook the casserole first and then put the french onions on under broiler to brown them.Reply
